Salmon and Marinade
- 1 ½ pounds salmon fillet, skin removed and cut into 1½-inch cubes
- 2 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 2 teaspoons lemon zest

- 1 teaspoon dried oregano
- Salt and black pepper, to taste

- 1 large zucchini, sliced into rounds
- 1 red bell pepper, cut into 1½-inch pieces
- 1 red onion, cut into chunks
- Lemon wedges, for serving

Instructions
- Prepare Marinade and Marinate Salmon: In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, salt, and pepper. Add the salmon cubes and gently toss to coat. Let marinate for 15–20 minutes to allow the flavors to infuse.
- Soak Skewers: If using wooden skewers, soak them in water for at least 20 minutes beforehand to prevent burning during grilling.
- Preheat Grill: Preheat a grill or grill pan over medium-high heat to ensure it’s hot enough to cook the kabobs evenly.
- Assemble Kabobs: Thread the marinated salmon cubes, zucchini slices, red bell pepper pieces, and red onion chunks alternately onto the skewers for a balanced flavor and colorful presentation.
- Grill Kabobs: Place the skewers on the hot grill and cook for 8–10 minutes, turning occasionally, until the salmon is cooked through and the vegetables are slightly charred and tender.
- Serve: Remove kabobs from the grill and serve immediately with fresh lemon wedges on the side for an extra burst of citrus.
