Description

Delicious Cheesy BBQ Chicken Pizza Rolls featuring a soft homemade dough filled with tangy BBQ sauce, shredded chicken, melted mozzarella cheese, and optional red onions. Perfect as a savory snack or party appetizer, these pizza rolls are baked to golden perfection and served warm with extra BBQ sauce for dipping.

Ingredients

Scale

Dough

  • 2 cups all-purpose flour, plus more for dusting
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 packet instant yeast (about 2 ¼ teaspoons)
  • ¾ cup warm water
  • 2 tablespoons olive oil

Filling

  • 1 cup BBQ sauce, plus more for serving
  • 2 cups cooked and shredded chicken
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup diced red onion (optional)

Instructions

  1. Prepare the Dough: In a large bowl, combine flour, sugar, salt, and instant yeast. Add warm water and olive oil, stirring until a dough forms.
  2. Knead the Dough: Knead the dough on a floured surface for about 5 minutes until smooth. Let the dough rest for 10 minutes.
  3. Roll Out the Dough: Roll the dough into a 14×9 inch rectangle on a floured surface.
  4. Add the Filling: Spread the BBQ sauce over the dough, leaving a small border around the edges.
  5. Add Toppings: Evenly distribute the shredded chicken, mozzarella cheese, and diced red onion over the sauce.
  6. Roll and Cut: Starting from the long side, roll the dough tightly into a log.
  7. Cut into Pieces: Cut the roll into 12 equal pieces.
  8. Let the Rolls Rise: Place the rolls into a greased baking dish. Cover and let them rise for 30 minutes.
  9. Bake: Preheat your oven to 375°F (190°C). Bake the pizza rolls for 25 minutes, or until golden brown.
  10. Serve: Serve the rolls warm with extra BBQ sauce for dipping.

Notes

  • You can substitute the shredded chicken with cooked pulled pork or beef for a different flavor.
  • Adding diced red onion is optional but adds a nice crunch and flavor.
  • Make sure the water is warm, not hot, to activate the yeast properly.
  • Use a baking dish that fits the rolls snugly to help them keep their shape during baking.
  • Feel free to add some chopped cilantro or green onions on top after baking for extra freshness.
