Ingredients

Scale

For the Filling

  • 1 lb ground beef (80% lean)
  • 1 small onion, finely diced
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup pickles, diced (optional)
  • 1 tablespoon yellow mustard
  • 2 tablespoons ketchup
  • Salt and pepper, to taste
  • 12 egg roll wrappers
  • Oil for frying (vegetable or canola oil)

For the Dipping Sauce (optional)

  • 1/4 cup mayonnaise
  • 1 tablespoon ketchup
  • 1 teaspoon mustard
  • 1 teaspoon pickle juice (or diced pickles)
  • Salt and pepper, to taste

Instructions

  1. Prepare the Filling: In a skillet over medium heat, cook the ground beef and diced onion until the beef is browned and cooked through. Drain any excess grease. Stir in shredded cheddar cheese, yellow mustard, ketchup, diced pickles (if using), salt, and pepper. Mix well and remove from heat. Allow the filling to cool slightly before assembling.
  2. Assemble the Egg Rolls: Place one egg roll wrapper on a clean surface with one corner pointing toward you. Spoon approximately 2 tablespoons of the prepared filling into the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides snugly. Roll tightly toward the top corner and seal the edge with a little water to ensure it stays closed during frying.
  3. Fry the Egg Rolls: Heat 1-2 inches of vegetable or canola oil in a deep skillet or frying pan to 350°F (180°C). Carefully place the egg rolls in the hot oil in batches, frying each side for 3-4 minutes or until they turn golden brown and crispy. Use tongs or a slotted spoon to remove them and drain on paper towels to remove excess oil.
  4. Make the Dipping Sauce: In a small bowl, combine mayonnaise, ketchup, mustard, and pickle juice or diced pickles. Stir until smooth and season with salt and pepper to taste.
  5. Serve: Serve the warm cheeseburger egg rolls with the prepared dipping sauce for a delightful and flavorful appetizer.

Notes

  • You can customize the filling by adding cooked bacon, diced tomatoes, or chopped lettuce for a fuller cheeseburger experience.
  • If you prefer baking instead of frying, brush egg rolls with oil and bake at 400°F (200°C) for 15-20 minutes or until crispy.
  • Ensure the oil temperature stays consistent to avoid greasy or undercooked egg rolls.
  • Use fresh egg roll wrappers for best texture and to avoid tearing during assembly.
  • The dipping sauce is optional but adds a nice tangy complement to the rich filling.
