Instructions
- Cook the Bacon: Heat a skillet over medium heat and cook the bacon until crispy, about 6 to 8 minutes. Once cooked, transfer the bacon to a paper towel-lined plate to drain excess grease and set aside.
- Cook the Scallion Pancakes: In the same skillet, cook the scallion pancakes according to the package instructions or until they are golden brown and crispy on both sides, about 2 to 3 minutes per side. Remove from the skillet and keep warm.
- Prepare the Eggs: Wipe out any excess grease from the skillet. Melt the butter over medium heat, then crack the eggs into the pan. Season with salt and black pepper. Cook the eggs to your preference. For a classic breakfast sandwich style, gently break the yolks and cook them until set, flipping once if desired. During the last minute of cooking, place a slice of cheese over each egg and allow it to melt.
